just add eggs!

i love eggs. scrambled, fried, boiled. in high school– to copy sly stallone in the movie rocky– we used to drink them down raw. before workout. eggs are a perfect food

i live by an adage: if you add eggs to anything, it becomes breakfast. pad thai, tamales, mac and cheese, hamburgers– leftovers can become magical once eggs are added.

one of my favorite breakfasts growing up is when dad made me either fried or soft boiled eggs over plain white rice. yummmm! oatmeal is my go-to breakfast these days but i am open to exceptions– especially when eggs are in the equation. like this morning…

yesterday, was my mom’s birthday. but we are really celebrating it on sunday when the whole family can be here. if one turns 98, they should have a weeks worth of celebrations! so, just in case– we also had a “mini” celebration yesterday and i picked up some pizza and pasta at the smoking monkey in renton. if you live is south seattle, try their pizza– it is pretty awesome.

so, before i went to bed last night, i was pretty excited with this thought: i am going to have two eggs over easy on top of that leftover pizza for breakfast!

there are no rules– no breakfast police are going to knock at the door once i crack the eggs and reheat the pizza. i learned in college that pizza leftovers in the mornings are a good thing. but the wisdom of later years perfects this truism: add eggs

so, today’s musing is nothing deep– just one of those simple joys of life that makes me happy– eggs and pizza in the morning for breakfast!
